Recipe: Chocolate Chip Banana Muffins

I can’t say that I’ve ever met anyone who hates muffins. They exist in almost every flavour combination imaginable, so there’s something for everyone.

The best thing about muffins is that they’re so versatile. Muffins for dessert? Great choice. Muffins for breakfast? Also acceptable! Any excuse to eat chocolate for breakfast is fine by me.

These muffins are crispy on the outside, soft on the inside, and full of chocolatey goodness. Thanks to the bananas, they keep enough moisture that you don’t even need to add extra butter before eating.

Chocolate Chip Banana Muffins

makes 12 muffins

Ingredients

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter
  • 1 cup white sugar
  • 3 ripe bananas, mashed
  • 1/2 cup water
  • 1 tbsp vanilla extract
  • 1 cup dark chocolate chips

Directions

  1. Preheat oven to 350oC.
  2. In a medium bowl, mix together flours, baking soda and salt.
  3. In a larger bowl, cream together butter and sugar, and then add in mashed bananas, water, vanilla extract and chocolate chips.
  4. Stir until uniformly combined, and then spoon into greased muffin tins.
  5. Bake for 25 minutes, or until toothpick comes out clean.
  6. Cool on a rack, and enjoy!
