No one actually likes eating vegetables, am I right? But what if you could get your required veggie intake without even tasting it?
Cauliflower is one of the vegetables out there that is great at disguising itself as something more delicious. Once you throw it into a dish with some cheese and breadcrumbs, you basically forget that it’s even there. By adding cauliflower to a traditional mac and cheese recipe and making a few other small tweaks like substituting greek yogurt for cream (lots of protein, bro), you can feel awesome enjoying a healthified version of everyone’s childhood favourite. Or just eat double.
Cheesy Cauliflower Pasta
Makes 4-6 servings
Ingredients
- 2 1/2 cups whole wheat penne
- 1/2 head cauliflower, broken up
- 1/2 onion, chopped
- 2 slices whole grain bread
- 1 1/2 cups cheddar cheese, grated
- 3/4 cup plain greek yogurt
- 1/4 cup milk
- 3 tbsp canola oil
- 1 tbsp dijon mustard
- salt + pepper
Directions
- Preheat oven to 400oF.
- Bring salted water to a boil on stove and cook pasta according to package directions. Add cauliflower for second half of cooking, and then drain over a colander when tender.
- Add onions to empty pot with 1 tbsp oil and fry over medium heat, until translucent.
- Toast bread slices and then combine with remaining oil and salt + pepper in food processor.
- Add pasta and cauliflower mixture to pot with onions. Stir in greek yogurt, 1 1/4 cups cheese, milk, mustard and salt + pepper to taste.
- Spread pasta mixture into a baking dish and top with breadcrumbs and remaining cheese.
- Cook in oven for 12-15 minutes or until golden brown and bubbling.
